Corn fritters with smashed avo and a leftover Romanesco sauce which I had made for a pasta dish 🌽🥑 Vegan brunch fit for kings. Serve these fritters with your fav dip and these become the best snack too 💛

For around 6 corn fritters:
250g plain flour
1tsp baking powder
2 spring onions, finely chopped
1 tsp cumin
1tsp chilli powder
Small handful of parsley, finely chopped
1 200g can of corn, drained and rinsed
180ml plant-based milk, I used oat

1. Combine all the dry ingredients in a big bowl and mix together.
2. Stir in the milk, and mix well, then add in the corn and mix until there are no more flour lumps. Season with salt and pepper
3. Heat a glug of veg oil in a non-stick pan, then add about a tbsp of batter into the pan and cook for about 3 mins on each side until golden.
4. Pop the fritters on a plate lined with paper towels to absorb extra grease.
5. Then server with either your fav sauce or dips or smashed avo and and egg!
