Harissa Roasted Veggie Bowl

Spice up your day with my tasty harissa tofu and roasted vegetable bowl. Ready in just 30 minutes, it’s flavour packed, vegan and gluten free!

In the bowl:

1/4 head of cauliflower, cut into florets
70g tofu, cubed
1/4 courgette, sliced
1tbsp harissa paste
Handful of tomatoes, chopped
100g puy lentils
70g hummus
Chopped coriander and parsley
Lemon juice & 1 tbsp evoo

Preheat the oven to 180 degrees c. In a mixing bowl, add the harissa paste, tofu, cauliflower and courgette. Coat the ingredients evenly with the paste. Place the ingredients onto a roasting tray and cook for 25 minutes until the cauliflower has a nice char.

Cook the lentils according to the packet instructions. Assemble the bowl with the other ingredients and dress with extra virgin olive oil and lemon juice. Enjoy!
