This is my favourite eggless chocolate cake - I swear by it and my customers love it!
Recipe
Eggless Chocolate Cake
Faye Pramraj
Ingredients
2 cups self raising flour
1 cup castor sugar
1 tsp bicarbonate soda
1/2 cup good quality cocoa
1/2 cup strong black coffee (make half cup of strong coffee)(let it cool) - can be replaced with plain boiling water
1 cup oil
1 cup buttermilk (or Maas)
1 tsp vanilla extract
Method
Preheat your oven to 180deg
Prepare 2 x 20cm tins
Sift dry ingredients in a large bowl.
Add the liquid ingredients one at a time and beat well.
Divide into two tins
Bake for 30 mins.
Icing
250g butter
1 tsp vanilla essence
1/2 cup cocoa
4 cups icing sugar
Cream the butter and essence. Add sifted icing sugar and cocoa
Mix until smooth and creamy
Add milk as required
Ganache
250g dark chocolate
125g double thick cream
Heat the cream and pour over broken chocolate pieces.
Allow to stand for a few minutes then beat well until smooth.
Pour over iced cake.
Nb. This is eggless
