Creamy Tomato Spinach Tagliatelle Delight

  • One pan Creamy tomato and spinach pasta 🍝 by @healthyfitnessmeals

    Serves 4-6

    Ingredients
    * 12 oz tagliatelle pasta nests (or any pasta)
    * 10.5 oz cherry tomatoes, halved
    * 1 small red onion, thinly sliced
    * 2 cups fresh spinach
    * 3 tbsp harissa (I used @mina ) or you can use tomato puree
    * 1 (5oz) @boursincheese, or any cream of your choice (cream cheese works too)
    * 1 tbsp tomato paste
    * 2 tsp mild pepper paste, optional
    * 3-4 garlic cloves, minced
    * 1 tsp dried oregano
    * 1 tsp dried basil
    * 2-3 tbsp olive oil, avocado oil
    * 3 1/2-4 cups vegetable broth
    * Salt & pepper to taste
    To garnish: fresh basil, grated Parmesan

    1- in a large pan or skillet, add all
    Of the ingredients except for the fresh basil and Parmesan (for garnish)
    2- cook covered over medium-high heat for about 7-8 minutes until the pasta starts to soften.
    3- uncover and press down on the pasta to separate. Then mash the tomatoes using the back of your spoon and gently mix everything.
    4- cover again and let it cook for another 8-10 minutes until the pasta softens and the sauce gets thick and the flavors meld
    5- Toss and garnish with fresh basil and grated Parmesan. Serve and enjoy.
