Cut the onions in half and peel them. Fry the onions in a pan with a little olive oil for about a minute on each side, cover with a lid and remove from heat. Place baking paper on a round baking tray. Sprinkle date honey, a little olive oil, coarse salt and black pepper on the baking paper, arrange the onion halves on the baking paper with the cut side facing down. Cover the onions with puff pastry, push the edges of the dough well and prick with a fork. Place the pan in an oven preheated to 180 degrees and bake for about forty minutes until the dough is golden. Place a large plate on the tray and turn over, remove the baking paper, sprinkle with crumbled feta and thyme leaves.
