Ingredients: For the Pickled Onions: • 1/2 red onion, thinly sliced • 1/2 cup distilled white vinegar • 1/2 cup water • 1 Tbsp sugar • 1 tsp kosher salt
For the Sauce + Slaw: • 3/4 cup plain Greek yogurt • 1/4 cup light sour cream • 3 Tbsp fresh cilantro, finely chopped • 1 clove garlic, minced • 1–2 limes, juiced (to taste) • 2 Tbsp water • 1/4 tsp salt • 3 cups red cabbage, shredded
For the Tacos: • 1 lb large shrimp, peeled and deveined • 1+1/2 tsp chili powder • 1+1/2 tsp cumin • 1/2 tsp garlic powder • 1 tsp kosher salt • 1 Tbsp olive oil • 6–8 cassava flour tortillas • 1 avocado, sliced • 1/2 jalapeño, diced
Instructions: 1️⃣ Pickle the Onions: Place the sliced onions in a heat-safe bowl. In a small pot, combine vinegar, water, sugar, and salt, and bring to a gentle boil. Pour the hot liquid over the onions and let sit at room temperature while you prep the other ingredients. (If you can wait an hour, they’ll taste even better!) 2️⃣ Make the Slaw: Mix all the ingredients for the sauce except the cabbage. Set aside 1/4 cup of the sauce for topping, then toss the remaining sauce with the shredded cabbage. 3️⃣ Cook the Shrimp: In a bowl, toss shrimp with chili powder, cumin, garlic powder, and salt. Heat a large pan over medium-high heat with 1 Tbsp olive oil. Sear shrimp for 1–2 minutes per side, until pink and opaque (internal temp: 145°F). 4️⃣ Assemble the Tacos: Toast tortillas in a clean pan over medium-high heat for ~30 seconds per side until golden brown spots appear. Assemble each taco with slaw, shrimp, pickled onions, avocado, jalapeño, and a drizzle of the reserved yogurt sauce. Serve fresh and enjoy!
