This healthier Elote mexican street corn dip is my current hyperfixation 🌽🫶🏻 by @mirandabrady
it’s so fresh and makes the perfect snack or summer side dish!
Ingredients: 2-3 cups corn 2 tbsp mayonnaise 1/4 cup Greek yoghurt (60g) 30g parmesan, grated 2-3 tbsp juice 1/4 tsp paprika 1/2 tsp garlic powder 1 cucumber 1/2 cup coriander / parsley 1/2 cup red or spring onion 1 tbsp jalapeño 30g feta, crumbled
Method: 1. Add corn to pan and cook for 5 minutes over high heat until lightly charred. 2. Mix the mayo, Greek yoghurt, lime juice, parmesan, paprika and garlic together in a bowl. 3. Add the corn to the bowl while it’s hot and mix well (the heat will melt the cheese). 4. Add cucumber, herbs, onion and jalapenos. Mix well and season with salt & pepper to taste. 5. Crumble over the feta and serve as a dip/salsa with corn chips or as a side salad. Serves 4
