Lemon Yogurt Cake A soft, fluffy, and moist cake with a bright lemon flavor — perfect for tea time or dessert!
Ingredients ( & Safe): • 1 ¼ cups all-purpose flour • ⅔ cup sugar • 1 ½ tsp baking powder • Pinch of salt • 2 large eggs • ¾ cup plain Greek yogurt • ¼ cup vegetable oil (sunflower or corn oil) • 1 tsp alcohol-free vanilla extract • Zest of 1 lemon • Powdered sugar for dusting
Instructions: 1. Preheat your oven to 170°C (340°F). Grease and line a square baking pan. 2. In a bowl, whisk together the flour, baking powder, and salt. 3. In another bowl, beat the eggs and sugar until light and fluffy. 4. Add yogurt, oil, vanilla, and lemon zest. Mix well. 5. Gradually add the dry ingredients into the wet mixture. Stir gently until smooth. 6. Pour the batter into the pan and bake for 30–35 minutes, or until a toothpick comes out clean. 7. Let it cool completely, then dust with powdered sugar and top with fresh blueberries (optional).
Tip: For a stronger lemon flavor, add 1 tbsp of lemon juice to the batter.
