A protein packed super green salad using leftover roasted chicken, topped with a homemade honey mustard dressing
Serves 1:
100g roast chicken breast
50g cooked quinoa
30g feta
100g steamed broccoli
100g steamed garden peas
60g steamed asparagus
2 spring onions, finely chopped
Handful of chopped mint & parsley
Dressing: 1tbsp extra virgin olive oil, 1/2tsp Dijon mustard, 1/2tsp honey, 1/4tsp garlic powder, fresh lemon juice to taste
