Recipe:
Ingredients:
- 400g seitan, cut into chunks
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 2 large tomatoes, pureed
- 1 cup coconut milk
- 1/2 cup cashew cream (blend soaked cashews with water until smooth)
- 2 tablespoons tomato paste
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1/2 teaspoon chilli powder
- Salt and pepper, to taste
- Fresh coriander, chopped (for garnish)
- Cooked basmati rice (for serving)

Method:
1. Heat the vegetable oil in a large pan over medium heat. Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
2. Add the minced garlic and ginger, and cook for another 1-2 minutes until fragrant.
3. Stir in the pureed tomatoes and tomato paste, and cook until the mixture thickens and the oil begins to separate, about 7-10 minutes.
4. Add the garam masala, ground cumin, ground coriander, turmeric powder, and chilli powder. Cook for 2-3 minutes, stirring constantly.
5. Add the chunks of seitan to the pan and stir to coat with the spices. Cook for another 5 minutes.
6. Pour in the coconut milk and cashew cream, stirring well to combine. Bring to a simmer and cook for 10-15 minutes, allowing the flavours to meld together.
7. Season with salt and pepper to taste.
8. Serve the vegan butter chicken hot, garnished with fresh chopped coriander and alongside cooked basmati rice.
