Tofu laksa 🌱🇮🇩
Delicious, creamy coconut laksa. Not super authentic but a nice quick easy recipe with no hard to find ingredients (get the vegan fish/oyster sauce from your local Asian supermarket)
Ingredients
1/2 tbsp @bionaorganic coconut oil
1/2 jar @tescofood Thai red curry paste*
1/2 sheet @yutakaeats nori seaweed, torn into smaller pieces
• 1/2 tbsp cumin seeds
• 1/2 tbsp coriander seeds
• 1 tsp turmeric
• 2 tsp vegan oyster sauce
• 800ml @oxo.europe meat free chicken stock (or sub for veg stock)
• 1 tsp salt, adjust to taste
• 400ml tin @bionaorganic coconut milk
• 2-3 tbsp lime juice, adjust to taste
• 1½ tsp sugar, adjust to taste
• 1 tsp MSG (optional but really good)
Toppings
• steamed green veggies, I used tenderstem and green beans
• handful mushrooms, fried
• beansprouts
• 120g @bluedragonuk udon noodles, cooked
• 1 block @tofoo, fried til crispy
• chopped spring onion
• fresh coriander, chopped
• sesame seeds
Method
• fry off red curry paste in coconut oil on low for 10 mins. While this cooks, toast cumin and coriander seeds in a dry pan for 2 mins careful not to burn). Crush them and set aside
• add cumin, coriander seeds, seaweed (reserve about 2 tsp seaweed for topping), salt and turmeric to the red curry paste mix. Fry gently for another 5-10 mins.
• add stock, bring to boil and reduce to a simmer, for 20-30 mins to allow flavours to intensify. (I sieved out the seeds etc after this stage).
• return laksa to pan and gradually add coconut milk. Stir well and heat through. Add lime, sugar, MSG to taste. Add noodles to a deep bowl, ladle over the laksa, then add your toppings. Enjoy!
