For this dish, I video called my mom so that she could instruct me through each step. I’ve made this dish many times before but can never achieve the taste of my mom’s cooking. So, here is the family’s secret recipe 😉
Ingredients:
2 lbs pork belly, cut in 3-4 inches pieces
10 large eggs, soft boiled
2 shallots, minced
1/4 cup fish sauce
1 tsp chicken bouillon
1 tbsp granulated sugar
Black pepper to taste
500 ml (1 can) coconut water/juice
1.5 cup water
Direction:
1. Marrinate the pork belly with shallots, fish sauce, chicken bouillon, sugar and black pepper overnight in the fridge.
2. Sear the pork belly all sides till they turn slightly golden brown. Add marrinate liquid to the pot, then add the coconut water/juice.
3. Cook in medium-low heat for 1 hour (uncovered). Then simmer in low heat for another 2 hour (uncover). You may add more coconut water or just water while cooking. Add the eggs and cook for another 15 minutes. Salt and pepper to taste.
4. Serve hot with steamed rice.
