Vegan Crispy Breaded Tofu Stirfry🥢

Recipe:
Ingredients:
- 400g firm tofu, pressed and cut into cubes
- 300g noodles of choice
- 100g breadcrumbs
- 2 tbsp soy sauce
- 2 tbsp plant-based milk
- 1 tbsp cornstarch
- 2 tbsp sesame oil
- 2 tbsp vegetable oil, for frying
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 200g mushrooms, sliced
- 100g spinach
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Spring onions and sesame seeds for garnish
Method:
1. Preheat your oil in a deep fryer or a deep pan to 180°C.
2. Cut tofu into cubes and toss with soy sauce. In a separate bowl, mix plant-based milk and cornstarch to create a slurry.
3. Dip tofu cubes first into the slurry, then coat with breadcrumbs until well covered.
4. Carefully place breaded tofu into the hot oil and fry until each piece is a crispy, golden brown. Remove and place on a paper towel to drain excess oil.
5. While tofu drains, cook noodles as per package instructions, drain, and toss with a dash of sesame oil chilli oil (Optional).
6. In a large pan, sauté garlic, ginger, and bell peppers in a tablespoon of vegetable oil until softened. Add mushrooms and spinach and cook until all veggies are tender.
7. Add the cooked noodles and crispy tofu to the pan, toss gently to combine.
8. Serve the stir-fry hot, garnished with vegan teriyaki sauce spring onions and a sprinkle of sesame seeds.
