SYN FREE BEEF KOFTA CURRY - serves 4 
500g 5% beef mince
250g basmati rice
4 tomatoes diced 
2 onions (1 diced 1 grated) 
2 tbsp tomato purée 
chicken stock (1 stock pot in 250ml water) 
5 large garlic cloves grated 
2 tsp garam masala
2 tsp ground coriander
1-2 green chillis diced 
2 dried bay leaf
6-8 cardamom pods crushed
Add the beef mince and grated onion to a bowl with a pinch of salt and pepper, half the chopped garlic, half the ground coriander and half the garam masala. Mix well and shape into balls (should make 16) 
Fry until browned then remove from pan and set aside 
Add the diced onion, remaining garlic, remaining ground coriander, remaining garam masala, chopped green chilli and fry until soft 
Add the stock, tomatoes, paste and simmer for 4-5 mins 
Return the meatballs to the pan and simmer covered for 13-15 mins until the sauce is thickened and the meatballs cooked through. 
Meanwhile add the bay leaves and cardamon to the rice and cook as per the instructions
