Simple Vegan Garlic & Tomato Spaghetti🍝

Recipe:
Ingredients:
- 400g spaghetti
- 4 tbsp extra virgin olive oil
- 4 large cloves garlic, thinly sliced
- 400g cherry tomatoes, halved
- 1/2 tsp red chilli flakes
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish
- Vegan parmesan-style cheese, grated, for serving (optional)
Method:
1. Cook the spaghetti in a large pot of salted boiling water according to the package instructions until al dente. Drain, reserving a cup of pasta water.
2. While the pasta cooks, heat the olive oil over medium heat in a large pan. Sauté the garlic slices until just golden, being careful not to burn.
3. Add the cherry tomatoes to the pan, and cook until they're softened and bursting, about 5 minutes.
4. Toss the cooked spaghetti into the pan with the garlic and tomatoes, adding a splash of reserved pasta water to bring the sauce together. Season with chilli flakes, salt, and pepper.
5. Serve hot, garnished with fresh parsley, some fresh Cherry tomatoes if desired and a sprinkle of vegan parmesan-style cheese if desired.
