Super Simple Vegan Pad Thai🌱

Serve 2
Ingredients:
300g of firm/ extra firm tofu - pressed to remove excess water and cut into cubes
2 shallots - finely chopped
1 red chili - finely chopped
3 garlic cloves - crushed
1 tbsp of toasted sesame oil
2 portions of rice noodles
2 handful of bean sprouts
3 spring onions - finely chopped
50g of roasted & salted peanuts - roughly chopped
a handful of chopped coriander
For the sauce:
3 tbsp tamari sauce
2 tbsp tamarind paste
the juice of 1/2 lime
2 tbsp coconut sugar
1 tsp of chili sauce
Method
Cook the noodles according to the packet's instructions. Drain and rinse under cold water to stop the cooking process. Add them to a bowl with a drizzle of sesame oil to prevent from sticking. Leave them on one side.
To make the sauce simply mix all the ingredients in a bowl. Set aside.
Add 1 tbsp of toasted sesame oil to a large pan. Once hot add in the shallots and cook on a medium heat for 5 minutes. Add in the chopped tofu and cook for a total of 10 minutes, turning it around so it get evenly browned. Add in the chopped chilli and garlic and cook for another 2-3 minutes. Add the spring onions, bean sprouts and noodles. Stir everything together, add a dash of tamari sauce and cook for another 2-3 minutes. Pour over the sauce and mix all together, cook for the final 2 minutes. Serve with chopped peanuts and a sprinkle of coriander.
