* 1/4 cup red onion diced
For Feta Dressing:
* 1/4 cup extra virgin olive oil
* 2 tbsp red wine vinegar
* 2-4 cloves garlic pressed or finely minced
* 2 tbsp crumbled feta cheese
* 1/4-1/3 cup fresh flat leaf parsley finely chopped
* kosher salt to taste
* fresh cracked pepper to taste
