Cheesy Zucchini Carrot Rice

INGREDIENTS:
1 tbsp vegan butter
1/2 small red onion sliced thinly
2 garlic cloves , sliced thinly
1 zucchini , grated
1 carrot, grated
2 tsp salt
2 cups cooked white rice
1.5 cups shredded vegan cheese
Toppings
Green onion
Sesame seeds
Grate zucchini and put in a colander over a bowl. Add 1 tsp salt and let it sit for about 10 minutes. Add the zucchini To a clean dish towel and squeeze out as much of the liquid as you can.
heat a large frying pan over medium-high heat. Add the vegan butter and let it melt. Add the onions and garlic and sauté for a few minutes. Add the carrots and zucchini and 1 tsp of salt. Sauté for a few minutes until the veggies start to soften. Add the rice and cheese and cook for about 2 minutes more or until the cheese melts.
Spoon into a bowl and add green onion and sesame seeds
