Lemon Garlic Roast Chicken Breasts
Ingredients:
4 boneless, skinless chicken breasts
4 cloves garlic, minced
2 lemons (1 for zest and juice, 1 for slicing)
3 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Preheat your oven to 400°F (200°C).
- In a small bowl, mix together minced garlic, lemon zest, lemon juice, olive oil, dried thyme, dried rosemary, salt, and black pepper to create a marinade.
- Place the chicken breasts in a baking dish. Rub the marinade over each chicken breast, ensuring they are well-coated.
- Slice the remaining lemon and place the slices on top of the chicken breasts.
- Bake in the preheated oven for about 25-30 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
- Optional: Broil for an additional 2-3 minutes to get a golden-brown color on top.
- Remove from the oven and let it rest for a few minutes before serving.
- Garnish with fresh parsley if desired.
