Easy vegan dahl

Ingredients
1 tbsp coconut oil
1 large onion, chopped
3 cloves of garlic, minced
Small piece of ginger, finely chopped
1/2 red chilli, chopped
300g fresh tomatoes, chopped
1 tsp salt
2 tsp ground cumin
2 tsp ground turmeric
2 tsp garam masala or curry powder
2 tsp black mustard seeds
400g red lentils
1.5 litres of veg stock
200g fresh spinach
Small bunch of coriander, chopped
Juice of a lime

1️⃣ Fry the onion in the coconut oil for 10 mins, adding the ginger, garlic and chilli for the last couple of minutes
2️⃣ Add the chopped tomatoes and 1 tsp of salt and cook for another 5 minutes
3️⃣ Add all the spices and stir through for a minute then add the lentils and stock and let it simmer for 50-60 minutes, stirring occasionally until the lentils are cooked and the stock is absorbed
4️⃣ Stir through the spinach, coriander and the juice of a lime and serve 😍
