Sweet Potato Rounds with Goat Cheese, Apple Slices & Hot Honey 🇦🇺🇦🇺🇦🇺🇦🇺 Ingredients:
2 medium sweet potatoes (about 400 g / 14 oz), sliced into 1/4-inch (0.6 cm) rounds
1 tablespoon (15 ml) olive oil
Salt and pepper, to taste
100 g (3.5 oz / 1/2 cup) goat cheese, softened
1 small apple, thinly sliced
2 tablespoons (30 ml) hot honey
Fresh thyme leaves, for garnish
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer and roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
Remove from oven and let cool slightly. Spread a small amount of goat cheese onto each sweet potato round.
Top with a thin apple slice and drizzle with hot honey.
Garnish with fresh thyme leaves and serve warm.
