Sticky Sesame Soy Chicken with Spiced Potatoes

  • CHINESE 5 SPICE, HONEY & SESAME CHICKEN TRAYBAKE:

    Fuss free, an easy midweek meal with Asian flavours and a sticky Sesame Soy Glaze 👌

    SERVES 2: Difficulty ⭐️

    ⏲️ PREP: 20 Minutes.

    Preheat oven to 200°C

    THE CHICKEN:

    In a bowl add the following and mix well. Add 2 chicken breasts and make sure they are fully coated.

    📌 1 tbsp sesame oil
    📌 1/2 tsp Chinese 5 spice
    📌 1 tbsp light soy sauce
    📌 1 tbsp honey
    📌 2 minced garlic cloves
    📌 Small piece of grated ginger

    THE POTATOES:

    Wash 350g baby potatoes and half or quarter them depending on the size. Put them in a bowl, add the following and give them a good toss to make sure they are well coated.

    📌 1/2 tsp Chinese 5 spice
    📌 1 tsp sesame oil & 1 tsp olive oil
    📌 Pinch of black pepper & a pinch of salt

    THE SAUCE:

    Add the following to a pan and heat until starting to bubble.

    📌 2 tbsp light soy sauce
    📌 1 tbsp honey
    📌 1 tsp rice vinegar
    📌 1 tsp sesame oil

    Once bubbling, gradually thicken by adding a cornflour slurry. 1 tsp cornflour mixed with 1 tbsp water. Once thickened remove from the heat & add 1 tsp sesame seeds.

    ⏲️ COOK: 45 Minutes.

    📌 Tip the potatoes into a baking tray, put them in the oven for 25 minutes.

    📌 Add the chicken to the potatoes and pour in the remaining marinade. Return to the oven for 20 minutes.

    📌 Once cooked leave to rest for a few minutes. Reheat the sauce and drizzle over the chicken. Add finely chopped spring onions and optional coriander leaves. Serve and enjoy 😉
