Ingredients: • Whole wheat tortilla, I used @onemightymill (or any tortilla you love) • 2 eggs, whisked • Salt + pepper • Shredded mozzarella • Crumbled feta • Olive oil for cooking
Served with kiwi, cucumber, and a matcha latte. Optional add-ons: cherry tomatoes, olives, mushrooms, pickled jalapeños, fresh herbs, spinach, avocado, or turkey bacon.
