- Cumin Seeds β 1 tbsp
- Fennel Seeds β 1 tbsp
- Dry Red Chilies β 4β5
- Black Peppercorns β 1 tsp
- Cloves β 3β4
- Green Cardamoms β 2
- Black Cardamom β 1
- Cinnamon Stick β 1 inch
- Bay Leaf β 1
- Turmeric Powder β Β½ tsp
- Dry Ginger Powder β Β½ tsp
- Onion Powder β 1 tsp
- Garlic Powder β 1 tsp
- Dry Mango Powder (Amchur) β 1 tsp
- Kasuri Methi (Dried Fenugreek) β 1 tsp
- Salt β 1 tsp (adjust as needed)
- Sugar β Β½ tsp (optional, balances flavors)
- Optional: Kashmiri Red Chilies β 2 (for color & mild flavor)
Preparation Method:
1. Dry roast coriander, cumin, fennel, chilies, pepper, cloves, cardamoms, cinnamon, and bay leaf on low flame until aromatic.
2. Allow to cool completely.
3. Grind into a fine powder.
4. Mix in turmeric, dry ginger, onion powder, garlic powder, amchur, kasuri methi, salt, and sugar.
5. Store in an airtight jar β stays fresh for 2β3 months.
How to Use:
