Speedy Satay Noodles with Kale 🥊
I’ve always loved noodles ~ they’re still my go-to when I want a comforting bowl, or something quick. This time I made a really simple satay style sauce then tossed it through some cooked egg noodles and kale ~ served with my favourite chilli crisp and a few Korean BBQ gyoza, crisped up for texture and extra flavour!
Sauce recipe (2 portions):
2tbsp crunchy peanut butter
50-100ml boiling water
2tbsp light soy sauce
1tsp white wine vinegar
1tsp sesame oil
> literally just mix it all together. Add more boiling water to thin as needed and adjust the other ingredients to your liking!
