Chicken Milanese with a Fried Egg, Parmesan, Truffle Mayo + Rocket
Inspired by the Ivy classic Chicken Milanese, my love for truffle is real! Side note when buying truffle oil, buy the stuff with actual pieces of truffle in the bottle, the flavour lasts forever unlike the infused type.
Serves 2
Ingredients
1 large chicken breast
50g flour
75g panko breadcrumbs
1 egg
parmesan
4 tbsp mayo
1 tbsp truffle oil
rocket
Truffle oil
2 eggs
Method
1. Slice the chicken breast in half length ways
2. Get 3 bowls ready with the flour, breadcrumbs and egg. Season the flour and breadcrumbs with salt and pepper.
3. Coat each chicken piece in the flour then the egg then breadcrumbs.
4. Heat a good amount of sunflower oil in a non stick pan and fry the chicken on both sides until golden and crisp, then rest on some kitchen towel.
5. Fry the eggs in some oil.
6. Mix together the mayo with the truffle oil until combined.
7. Grate lots of parmesan over the chicken and rocket, top with an egg, drizzle over more truffle oil and serve with a dollop of the truffle mayo.
