Ingredients
1 Β½ cups raw cashews (soaked overnight or for at
least 4 hours)
1 cup blueberries (fresh or frozen)
Β½ cup coconut cream

cup maple syrup or agave syrup

cup melted coconut oil
1 teaspoon vanilla extract
Zest of 1 lemon
Juice of 1 lemon
A pinch of salt
1 cup graham cracker crumbs (or any vegan-friendly biscuit)
3 tablespoons melted coconut oil
Instructions:
1. Prepare the crust: Mix graham cracker crumbs with melted coconut oil. Press the mixture into the bottom of a springform pan to form the crust. Refrigerate while preparing the filling.
