How can I resist cheesy gnocchi heaven?
RECIPE SERVES 4 - 1a choice + syns for gnocchi (mine worked out at 7 rounded up)
500g lean pork mince
1 tsp sweet paprika
1 tsp herbes de Provence
1 onion, finely diced olive oil spray
2 garlic cloves, crushed
500g gnocchi (check brands as some higher syns than others)
70g primula light (a)
250ml hot chicken stock
½ tsp red chilli flakes
30g Parmesan, freshly grated (a)
2 handfuls of spinach, stems removed
100g mozzarella, broken into pieces (2a)
Blitz the pork mince, spices, garlic and onion until it’s like a sausage meat texture.
Fry out the minced pork and break up into small pieces then add the gnocchi and mix to combine. Cook for a further 5 minutes.
Mix the primula with the hot stock until they are combined and the cheese is melted.
Add the creamy sauce to the pork along with half the Parmesan and mix until combined.
Stir in the spinach until just wilted. Top with the mozzarella and remaining Parmesan and cook in the oven until bubbling and golden.
I served mine with lots of extra #speedfood
