Recipe:
Ingredients:
- 400g firm tofu, pressed and cubed
- 1 tablespoon vegetable oil
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chilli powder, adjust to taste
- 600g fresh spinach, washed and chopped
- 200ml vegetable stock
- 2 tablespoons vegan cream
- Salt to taste
- Fresh coriander, for garnish
- Cooked basmati rice, to serve

Method:
1. Pan-fry tofu cubes in oil until golden on all sides. Set aside on a paper towel to drain.
2. In the same pan, add more oil if needed, and cook onions until translucent. Stir in garlic and ginger, cooking until aromatic.
3. Mix in cumin, coriander, turmeric, garam masala, and chilli powder, toasting spices gently.
4. Add spinach and vegetable stock, simmering until spinach wilts and becomes tender.
5. Blend spinach mixture to a creamy consistency, then return to the pan. Stir in vegan cream and add salt to taste.
6. Add fried tofu cubes to the saag, simmering until everything is heated through.
7. Serve hot, garnished with fresh coriander over a bed of fluffy basmati rice.
