Southern-Style Potato Salad
Ingredients:
• 3 lbs Yukon Gold, Russet, or Red Potatoes, peeled and cut into bite-sized cubes
• 1 cup mayonnaise
• 2 tablespoons yellow mustard
• 2 teaspoons apple cider vinegar
• ¼ cup sweet pickle relish
• 4 hard-boiled eggs, peeled and chopped
• 2 ribs celery, chopped
• ⅓ cup chopped green onions
• Kosher salt, to taste
• Fresh ground black pepper, to taste
• Paprika, for garnish
Instructions:
1. Put the cubed potatoes in a big pot and cover them with cold water. Bring them to a boil over medium-high heat and let them cook for 10-15 minutes until they’re tender when poked with a fork. Drain them in a colander and let them cool down a bit.
2. In a large bowl, whisk together the mayonnaise, yellow mustard, and apple cider vinegar until it’s all mixed up nicely. Add in the pickle relish, chopped hard-boiled eggs, celery, green onions, and the drained potatoes. Gently fold all these veggies and eggs into the dressing.
3. Season your salad with salt and pepper to your liking. Sprinkle some paprika on top for that final touch. Enjoy your Southern-style potato salad!
