Home-Made Vegan Ravioli🍝

Recipe:

Ingredients:
- For the ravioli dough:
- 300g plain flour
- 1 tsp salt
- 2 tbsp olive oil
- 120ml water
- For the filling:
- 250g vegan ricotta cheese
- 50g spinach, finely chopped
- Salt and pepper, to taste
- For the infused oil:
- 6 tbsp olive oil
- 2 cloves garlic, thinly sliced
- 1 tsp red chilli flakes
- Fresh basil and parsley, finely chopped
- Salt and black pepper, to taste

Method:
1. Begin by making the ravioli dough. Mix the flour and salt in a large bowl. Make a well in the center, add the olive oil and gradually mix in the water to form a smooth dough. Knead for about 10 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.
2. For the filling, combine the vegan ricotta, spinach, salt, and pepper in a bowl. Mix until well combined.
3. Roll out the ravioli dough on a floured surface to a thin sheet. Place teaspoons of the filling at regular intervals over half of the pasta sheet. Fold the other half over the filling. Press around each mound of filling to seal the dough, removing any air pockets. Cut out the ravioli using a pastry cutter or a sharp knife.
4. Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4 minutes, or until they float to the surface and are tender. Drain.
5. For the infused oil, heat the olive oil in a small pan over low heat. Add the garlic and chilli flakes, and gently sauté until fragrant. Remove from heat and stir in the chopped herbs.
6. To serve, arrange the cooked ravioli on plates. Drizzle with the herb-infused oil and season with salt and black pepper. Garnish with additional fresh herbs.
