Roast cauliflower with white bean & courgette dip and coriander salsa 🤩
This recipe is worth making for the salsa alone- so so good!
The cauliflower is roasted until golden and tender, then served with a creamy white bean & courgette puree, drizzled with this vibrant coriander salsa for a burst of freshness.

1 cauliflower, broken into florets
1 tbsp olive oil
Salt & pepper
For the roast courgette dip;
3 courgettes, roasted
1 can butter beans
2 tbsp extra virgin olive oil
2 tbsp tahini
Juice 1/2 lemon
1 garlic clove
Salt & pepper
For the salsa;
40g coriander, chopped
3 cloves garlic, chopped up finely
1 red onion, chopped up finely
1/2 large red chilli- seeded and diced
3 tablespoon red wine vinegar
1 teaspoon salt
3 tbsp extra-virgin olive oil
To cook the cauliflower;
Add the cauliflower to the air fryer basket, along with 1 tbsp olive oil and season well.
Cook on 180C and 7 minutes.
At half-time, flip the steaks around and cook for 5 more minutes.
For the dip
Add all the ingredients to a food processor and blitz to smooth paste
For the salsa
Add all the ingredients to a bowl & mix to combine
