Vegan Chipotle Tofu Skewers🍢

Recipe:
Ingredients:
- 400g firm tofu, cut into 2cm cubes
- 2 large red bell peppers, cut into chunks
- 2 red onions, cut into wedges
- 200g button mushrooms, halved
- For the marinade:
- 3 tbsp olive oil
- 2 tbsp chipotle paste
- 1 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, finely chopped for garnish
Method:
1. In a large bowl, whisk together the olive oil, chipotle paste, lime juice, minced garlic, smoked paprika, salt, and pepper to create the marinade.
2. Add the tofu cubes, red bell pepper chunks, red onion wedges, and button mushrooms to the bowl. Toss gently until all the ingredients are well coated with the marinade. Allow to marinate for at least 15 minutes, but for best results 1 to 2 hours or overnight.
3. Preheat a grill or griddle pan over medium-high heat.
4. Thread the marinated tofu, peppers, onions, and mushrooms alternately onto skewers.
5. Grill the skewers for about 7-8 minutes on each side or until the vegetables are charred and the tofu is golden and crispy.
6. Remove the skewers from the grill and sprinkle with chopped parsley before serving.
