STICKY TOFU 💚

This evening’s sticky tofu is definitely a family favourite (not just for vegans!) and is so easy to make . If you’re a tofu lover, you’ll love it , if you’re not - it might just convert you 👌💯😍

Deets - serves 3
1 x 450g block firm tofu
2 tspn cornflour
1-2 peppers , diced

For the sticky sauce
75ml light soy sauce
50ml water
1 tbspn @myvegan sugar free maple syrup
2-3 tspn gochujang paste
2 garlic cloves, crushed
Small piece of ginger, grated
2 tspn cornflour

Method
1. Cut the tofu into cubes, coat with 2 tspn cornflour (give it a good shake) and bake in the oven on a non stick tray for about 20-25 minutes until crispy- turn it part way through cooking
2. Meanwhile, stir fry the peppers on the hob with a little oil/spray oil
3. Add all of the sticky sauce/marinade ingredients to a jug or bowl and whisk until smooth
4. Once the tofu is crispy, add it to the pan with the peppers and pour the sauce over. Continue to stir fry until the sauce has reduced and totally coated the tofu and peppers
5. Serve with steamed basmati rice, edamame/soya beans and tenderstem broccoli
6. Enjoy 😊
