Ingredients: • 2 normal sausages (any you like — pork, chicken, veggie), sliced or crumbled • 2 cups cooked rice (preferably cold) • 2 cloves garlic, minced • 1 small onion, diced • 1 spring onion, chopped • 1 small carrot, diced (optional) • 1–2 tablespoons soy sauce • 1 teaspoon sesame oil (optional, but nice for flavour) • 1 tablespoon oyster sauce (optional — skip if you want it vegetarian) • 2 tablespoons vegetable oil • White or black pepper, to taste
Optional extras: frozen peas, corn, bell peppers, etc.

Method: 1. Cook the sausage: Heat 1 tablespoon oil in a pan. Fry the sausage slices or crumbles until browned and cooked through. Remove and set aside. 2. Fry aromatics: In the same pan, sauté garlic, onion, and the white parts of the spring onion until fragrant. 3. Add veggies (if using): Stir-fry diced carrot or any other quick-cooking veg for a minute or two. 4. Add rice: Add in the rice, breaking it up so there are no big clumps. Stir-fry everything together. 5. Season: Add soy sauce (start with 1 tablespoon), a drizzle of sesame oil, a little oyster sauce if using, and pepper. Stir well. 6. Finish: Add the sausage back in. Stir everything together for another minute. Taste and adjust seasoning if needed. 7. Garnish: Top with green parts of spring onion and some curry sauce!
