3 tbsp chia seeds
1–2 tbsp maple syrup or honey (to taste)
½ tsp pumpkin pie spice (or cinnamon, nutmeg, ginger mix)
½ tsp vanilla extract
Pinch of salt
Instructions:
In a mixing bowl, whisk together milk, pumpkin puree, maple syrup (or honey), pumpkin pie spice, vanilla, and salt until smooth.
Stir in chia seeds and mix well to prevent clumping.
Cover the bowl and refrigerate for at least 2–3 hours, or overnight, until thickened.
Stir again before serving.
Top with granola, whipped cream, or a sprinkle of cinnamon if desired.
