📝 Ingredients
12 oz linguine
1 lb sirloin or ribeye steak, cut into bite-sized cubes
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 small onion, finely chopped
2 cups baby spinach, fresh
1 cup heavy cream
½ cup milk
1 ½ cups Colby Jack cheese, shredded
½ tsp smoked paprika (optional)
Salt & black pepper, to taste
🍳 Directions
1. Cook the Linguine
Bring a pot of salted water to a boil and cook linguine until al dente. Drain and set aside.
2. Sear the Steak Bites
Season steak with salt and black pepper.
Heat olive oil in a skillet over medium-high heat, then sear steak bites for 2–3 minutes per side until browned. Remove and set aside.
3. Make the Creamy Sauce
In the same skillet, melt butter. Add onion and garlic, cooking until fragrant.
Stir in heavy cream and milk, bringing to a gentle simmer.
Add Colby Jack cheese and smoked paprika, stirring until smooth and creamy.
4. Add Spinach & Combine
Stir in spinach until just wilted.
Add linguine and steak bites to the sauce, tossing to coat evenly.
5. Serve
Plate warm with extra shredded Colby Jack on top, if desired.
