A slow simmer chili that tastes like fall and warms from the inside with gentle heat.
Ingredients:
• 1 tbsp olive oil
• 1 lb chicken breast, cubed
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 tbsp chili powder
• 1 tsp cumin
• 1 cup pumpkin puree
• 1 can diced tomatoes
• 1 can white beans, drained
• 2 cups broth
• 1/2 cup cottage cheese
• Salt and pepper
Methods:
Sear chicken in oil with a pinch of salt until lightly browned, remove to a plate.
Sauté onion and garlic until sweet and translucent.
Stir in chili powder and cumin to toast the spices.
Add pumpkin, tomatoes, beans, and broth, then return chicken.
Simmer 18–22 minutes until thick and cozy.
Off heat stir in cottage cheese for creamy finish and adjust salt.
