    1/4 teaspoon ground nutmeg
    1/2 cup chopped nuts (optional, such as walnuts or pecans)
    1/2 cup shredded coconut (optional)

    Instructions:

    Preheat the Oven:
    Preheat your oven to 350°F (175°C).
    Grease a 9x5-inch loaf pan or line it with parchment paper.
    Mix Dry Ingredients:
    In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
    Mix Wet Ingredients:
    In another bowl, beat the eggs.
    Add the crushed pineapple (with juice), vegetable oil, and vanilla extract to the eggs. Mix well.
    Combine Wet and Dry Ingredients:
    Pour the wet ingredients into the bowl with the dry ingredients.
    Stir until just combined. Do not overmix.
    If using, fold in the chopped nuts and shredded coconut.
    Bake the Bread:
    Pour the batter into the prepared loaf pan.
    Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

    Cool and Serve:
    Allow the bread to cool in the pan for about 10 minutes.
    Remove from the pan and let it cool completely on a wire rack.
