ingredients
8 oz (about 2 cups) mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup unsweetened almond milk (or any plant-based milk of your choice)
- 2 tablespoons olive oil
- 1/2 teaspoon dried thyme
- 2 tablespoons cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
- Fresh parsley, for garnish (optional

**Method
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they become translucent, about 2-3 minutes.

2. Add the sliced mushrooms and cook for another 5-7 minutes until they release their moisture and start to brown.

3. Sprinkle the dried thyme over the mushroom mixture and stir well.

4. Pour in the vegetable broth and almond milk. Bring the mixture to a simmer and cook for about 10-15 minutes to allow the flavors to meld.

5. In a small bowl, mix the cornstarch with water until it forms a smooth slurry.

6. Slowly pour the cornstarch slurry into the simmering soup while stirring continuously. Continue to cook for an additional 2-3 minutes, or until the soup thickens to your desired consistency.
