RECIPE 👇
16 oz of extra firm tofu
2 tbs of olive oil
1 tbs of tomato paste
1 tbs of adobo paste
1/2 tsp of cumin
Juice of 1 lime
1/4 cup of cilantro, chopped
Serve with:
1/2 cup of black beans
1/2 cup of corn
Handful Spinach
Vegan shredded cheese
1. Break the tofu apart with your hands.
2.Place olive oil, tofu, tomato paste, adobo paste and cumin in a pan on medium-low heat. Mix well. Cook for 5 minutes.
3.Add lime juice and cilantro. Cook for 5-7 minutes.
4.Add to tortilla
5. Serve with black beans, spinach, vegan cheese and corn!
6. Enjoy
