Make this Vegan Cobb Salad with Tempeh Bacon, Silken Tofu ‘Boiled Eggs’ with Red Wine Vinaigrette next time your have friends and family over. They’ll love it!

ON THE PLATTER 👉🏻 A base of romaine lettuce topped with crispy chickpeas seasoned with a poultry spice and herb mix, cherry tomatoes, corn, avocado, tempeh "bacon", red onion and silken tofu boiled "eggs" with a side of red wine vinaigrette.
❇️ FOR THE "EGGS" ⤵️
🔹5oz firm silken tofu, diced
🔹5oz yellow silken tofu, diced (I used yuzu tofu)
🔹1 tsp kala namak (black salt that adds a very eggy flavor)
👉🏻 Combine all the ingredients together in a container, cover with an airtight lid and refrigerate at least an hour. Enjoy!
❇️ FOR THE VINAIGRETTE ⤵️
🔹⅓ cup olive oil
🔹3 tbsp red wine vinegar
🔹2 tsp dijon mustard
🔹1 tsp nutritional yeast (optional)
🔹1 clove garlic, minced
🔹1 tsp sea salt
👉🏻 Combine all the ingredients in a jar with an airtight lid and vigorously shake to combine. Enjoy!
