Classic Comfort: Hearty Shepherd's Pie with Creamy Mashed Potatoes
Ingredients:
1 lb ground lamb (or beef) 1 onion, chopped 2 carrots, diced 2 cloves garlic, minced 1 cup frozen peas 2 tablespoons tomato paste 1 cup beef broth 1 teaspoon Worcestershire sauce 1 teaspoon dried thyme Salt and pepper to taste 4 cups mashed potatoes (prepared) 2 tablespoons butter 1/2 cup shredded cheddar cheese (optional)
Directions:
Preheat your oven to 400°F (200°C). In a large skillet over medium heat, add the ground lamb (or beef) and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary. Add the chopped onion, diced carrots, and minced garlic to the skillet. Sauté for about 5 minutes, or until the vegetables are softened. Stir in the tomato paste, beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld. Add the frozen peas and stir to combine. Remove from heat. Transfer the meat mixture to a baking dish and spread it out evenly. Top with the prepared mashed potatoes, spreading them to cover the meat completely. If desired, dot the top with butter and sprinkle with shredded cheddar cheese. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbling.
