Easy Vegan Sushi bowls

Ingredients:
Organic marinated tofu pieces
Spinach leaves (or any green leaves)
300g cooked sushi rice
Selection of vegetables/fruits (avocado, pepper, mango etc)
100g edamame beans, cooked
Tinned sweetcorn
Wakame (most sushi counters will sell pots of it)
Sesame seeds
Nori sheets
Ingredients for the peanut sauce:
4 tbsp peanut butter
2 tbsp tamari (or soy sauce)
1 tbsp rice wine vinegar
1.5 tbsp lime juice
1 tsp agave syrup
Water to thin
1️⃣ To make the tofu, literally fry for 5 mins in a little bit of oil
2️⃣ Boil the rice as per packet instructions and leave to cool slightly whilst you chop all your vegetables
3️⃣ Mix all the sauce ingredients together and add a little water to thin if needed
4️⃣ Add everything to your bowls, top with sesame seeds, drizzle with the peanut sauce and serve with nori sheets
