This delicious Turkish inspired Red Lentil Soup is healthy, filling, full of plant protein, and really easy to make!
Ingredients:
1 cup red lentils
6 cups vegetable stock
1 small onion
3 garlic cloves
2 medium carrots
1 red bell pepper
1 heaping tbsp tomato paste
1/2 tbsp paprika paste*
1/2 tsp cumin
1 tbsp olive oil
Salt to taste
Top with:
Fresh lemon, dried mint, chili flakes
*can be replaced with harissa paste or 1 tsp paprika
Method:
Rinse lentils very well, and roughly chop onion, garlic, carrot and bell pepper. Heat up olive oil and saute veggies for about 10 minutes on low to medium heat.
Then add cumin, tomato and paprika paste and stir for a minute.
Add vegetable stock and lentils, and bring everything to a boil. Simmer for 20 minutes, then use an immersion blender or transfer to a blender and mix until smooth. If needed, add extra water or broth to reach desired consistency. (Soup also thickens a lot once it cools down).
Top with mint, chili flakes, and plenty of lemon juice, and enjoy!
