Chicken, mushroom & ‘red wine’ stew

Perfect Sunday comfort food. Gotta have roasted carrots as I’m OBSESSED!

RECIPE - SERVES 4
1.5 #syns per portion

3-4 chicken breaks cut into small chunks
1 large red onion cut into slices
4 bacon medallions cut into small pieces
250g chestnut mushrooms sliced
3 garlic cloves minced
2 bay leaves
2 tbsp redcurrant jelly (4)
Red wine stock pot (in 250ml of water)
Chicken stock pot (in 250ml of water)
2 level tbsp corn flour (2)

Fry off the chicken until beginning to colour then add the onions and mushrooms and fry until softened.

Add the garlic and fry to another 2-3 minutes

Add the stocks, redcurrant jelly & bay leaves and leave to simmer until the stock begins to reduce

Mix the cornflour with a little of the stock and stir into the stew & bubble until thickened

SERVE with #speedfood & garlic mash
