Cheesy Vegan Gnocchi Bake🍝

Recipe:
Ingredients:
- 500g vegan gnocchi
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 400ml plant-based cream
- 150g grated vegan mozzarella
- 50g vegan parmesan, grated
- 1 teaspoon smoked paprika
- 1 teaspoon mustard
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
- 1 red chilli, thinly sliced, for garnish
Method:
1. Preheat your oven to 200°C (390°F).
2. In a large pan, heat the olive oil over medium heat. Sauté the onion and garlic until translucent, about 3 minutes.
3. Add the plant-based cream, smoked paprika, mustard, and half of the grated vegan cheeses to the pan. Stir until the cheese melts into the cream, creating a smooth sauce. Season with salt and pepper.
4. Cook the gnocchi in boiling water according to the package instructions, then drain and add to the cheese sauce, mixing gently to coat.
5. Transfer the gnocchi and sauce mixture to a baking dish. Sprinkle over the remaining vegan mozzarella and parmesan.
6. Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbling.
7. Let the bake sit for 5 minutes before serving. Garnish with fresh parsley and red chilli slices for an extra kick.
