๐ฅ Broccoli Slaw and Chickpea Rice with a Lemon Tahini Dressing by @theyummyvegan ๐งก This is packed with great textures and flavors and of course lots of vegetables! A little summery vegan bowl for those who can't wait for summer!
๐๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐:
3 cups (600 g) of cooked Rice (slightly warm)
2 1/2 cups (212 g) of Broccoli Slaw roughly chopped (find it in the bagged salad section of your grocery store)
1 (16 oz) can of Chick Peas rinsed and drained
1/2 cup (17 g) Cilantro chopped (you can sub parsley)
Squeeze of Lemon
Salt & Pepper to taste
๐๐ฒ๐บ๐ผ๐ป ๐ง๐ฎ๐ต๐ถ๐ป๐ถ ๐๐ฟ๐ฒ๐๐๐ถ๐ป๐ด:
2 Tbsp (30 g) of Tahini
Juice from 1 Lemon
3 Tbsp (45 ml) of good Olive Oil
1 tsp of (5 ml) Vegan Honey or Maple Syrup
2 -3 Tbsp (30-45 ml) Water to thin as needed
Salt & Pepper to taste
๐๐ถ๐ฟ๐ฒ๐ฐ๐๐ถ๐ผ๐ป๐:
1. Make the dressing by combining all of the ingredients. Set aside.
2. Give the Broccoli Slaw a rough chop and add it to a large bowl along with the cooked Rice, rinsed Chick Peas and chopped Cilantro.
3. Season the mixture with Salt & Pepper and a squeeze of Lemon.
4. Pour in 1/3 - 1/2 of the dressing and mix well. Serve the remainder of the dressing along side.
