BLT Macaroni Salad
Ingredients:
🍝 2 cups macaroni pasta
🍅 1 cup cherry tomatoes, halved
🥬 1 cup lettuce, chopped
🧅 1/4 cup red onion, finely chopped
🥒 1/4 cup cucumber, diced
🥛 1/2 cup mayonnaise
🍋 1 tablespoon lemon juice
🥄 1 tablespoon Dijon mustard
🌿 Salt and pepper to taste
Directions:
Cook macaroni pasta according to package instructions. Drain and rinse with cold water.
In a large bowl, combine mayonnaise, lemon juice, and Dijon mustard. Mix well.
Add cooked macaroni, cherry tomatoes, lettuce, red onion, and cucumber to the bowl. Toss to coat.
Season with salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
