Beetroot Dip, Whipped Tahini & Pistachio Dukkah!
A vibrant and flavourful dish, perfect for dipping or as a stunning addition to a mezze platter, festive sharing kinda thing!
Earthy beetroot dip, creamy whipped tahini, and crunchy pistachio dukkah create an AMAZING combination of textures and flavours.

Beetroot Dip
200g cooked beetroot
Juice 1/2 lemon
1 garlic clove
2 tbsp mayo
Handful toasted walnuts
1/2 tsp cumin seeds
1 tsp sea salt
Black pepper
Method:
Add everything to a food processor and blitz until smooth + creamy. Adjust seasoning.
Whipped Tahini
50g tahini
1 garlic clove
Juice 1/2 lemon
80g natural yogurt
1/2 tsp sea salt
25ml water
Method:
Blend all ingredients until super smooth, adding extra water for desired consistency.
Pistachio Dukkah
100g pistachios
1 tbsp cumin seeds
1 tbsp coriander seeds
3 tbsp sesame seeds
2 tbsp sunflower seeds
Fresh thyme leaves
1 tsp sea salt
1/2 tsp chilli flakes
Method:
Toast seeds in a dry pan until fragrant. Cool, then mix with chopped pistachios, thyme, salt + chilli flakes.
To Serve
Spread whipped tahini on a platter.
Spoon beetroot dip on top or alongside.
Scatter with dukkah, drizzle olive oil, fresh dill + pul biber if you like heat.
Serve with warm flatbreads, crackers or veg.
